Whole Wheat Apple Bread

There are a zillion things to do with apples like pie, crisp, sautéed, mashed, sauced, butter, slow roasted or even oven roasted – but I have been eyeing the whole wheat flour in the cupboard and wanted to put it to good use.  Whole wheat is a heart healthy option, the ingredients are likely already in your pantry, and being so basic, this is a fail safe baking exercise.  I make this and use it for breakfast, a snack at lunchtime or for dessert with some confectioners sugar sprinkled on top.  An orange or lemon glaze over top would be amazing as well.  Or just a light spread of butter 🙂

INGREDIENTS:
(makes 2 loafs of bread)

3 cups whole wheat flour (I like King Arthur)
2 teaspoons cinnamon
2 teaspoons ginger
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon baking powder
3 eggs
2 cups sugar
1 cup applesauce
1 tablespoon vanilla
1 cups apples (peeled & diced)

Turn on oven to 350; grease 2 loaf pans (cake pans if you don’t have loaf pans).  Bake until brown – ovens vary – so 30-45 minutes.  Stick a toothpick in it and make sure it’s done, like you would with a cake.   Easy and DONE.
