I tried a new recipe from @TheKitchn over the holidays; boy was this a hit! I doubled the recipe and served it to my tennis team (18) for brunch. Per usual, I had to pair this down to meet my minimalistic needs. They call it a Baked Croque-Monsieur Casserole, I call it eggs, ham, cheese & french bread. FWIW – I made this ahead of time and let sit overnight, so that the flavors could all soak in. Great option for breakfast, brunch, lunch OR dinner.
1 loaf of french bread
1 jar of Dijon mustard
1/2 lb. of sliced ham (ask the deli to slice super thin)
1/2 cup of chives (chopped)
2 cups of Gruyere cheese (grated/shaved)
2 cups of whole milk
salt & pepper
In a large bowl, mix eggs & milk – add a pinch of salt & pepper. I tossed in a little bit of onion & garlic powder for flavor, but you don’t have to. Lather a baking dish (9×12) withe a tab of butter, make sure to get the sides and in the nooks & crannies.
Slice up your french bread into 1/2 inch pieces on the diagonal, then spread mustard on each slice and place mustard side UP in baking dish. Make one complete layer, and take a ladle and cover each slice just enough, then sprinkle ham, chives & cheese. Do another layer of bread except this time, place the mustard side DOWN. Use the rest of the egg mix, ham, chives & cheese. COVER and REFRIGERATE.
When you are ready to make, turn on over to 350°F, and bake for 40 minutes. Remove from oven, slice into squares and done.
Serve with a light salad (pomegranate) or a side of citrus (grapefruit).
